There are some classic cookies that are a winner no matter how old your are.  Snickerdoodles are that type of cookie–you can bring them to a holiday cookie exchange, bake them for a kid’s birthday party, or just leave them in a container on your countertop to return to whenever a craving for something sweet hits.

These were originally a request: Apple Spice Snickerdoodles.  These add a twist to the classic version of the cookie.  There’s still the tangy flavor that everyone has come to love with thanks to the cream of tartar, but dried apples are mixed into the dough to provide a slight punch of apple flavor with every bite.  The dough is then rolled into the classic cinnamon-sugar mixture with nutmeg, allspice, and cloves added in to mimic the spices in an apple pie.

They are just as soft and chewy as a Snickerdoodle can be.  And, they are so light and have that perfect hint of sweetness so that you’ll find yourself grabbing for more because they don’t weigh down your stomach or fill.

These are the perfect cookie to bring to a bake sale or put out on the table if someone stops in for coffee.  Everyone goes in with the expectation that they know what they’re getting, but then they get that surprise of the apple and added warming spices.

Plus, these are some of the easiest cookies to make!  It only takes a matter of minutes to mix the dough.  Allow it to chill up a bit for easier rolling, shape with your hands, rolling the dough into a ball, and coat with the spice-sugar mix.  You don’t need to anything more than that–just place them on the baking sheet and stick them in the oven for a quick ten minutes.  They come together so quickly.  Actually, in my early days of baking Snickerdoodles were always one of my go-tos.  They were quick, easy, and essentially impossible for me to mess up!

So the next tim you want a cookie that will impress with minimal effort, go ahead and give these a try.  One batch of these and people will think you know your way around the kitchen even if it’s not your strength!

Apple Spice Snickerdoodles
The classic Snickerdoodle cookie gets a bit of a makeover as dried pieces of apple are folded into the dough and balls of dough are dipped into a cinnamon, nutmeg, allspice, cloves, and sugar mixture. Yields 30 cookies

Instructions
  1. In the bowl of a stand mixer or with a hand mixer, cream together the butter and sugar until light and fluffy (about 3-5 minutes on high). Add the egg and vanilla one at a time, mix to combine between each addition.
  2. In a separate bowl, whisk together the flour, salt, cream of tartar, baking soda, and cinnamon. Add these dry ingredients to the mixing bowl half at a time, mixing until the dough begins to come together. Slowly fold in the dried apple pieces. Chill the dough for 30 minutes.
  3. In a small bowl, mix together the 2/3 cup granulated sugar, cinnamon, nutmeg, allspice, and cloves. Set aside.
  4. Preheat the oven to 375°F and line two baking sheets with parchment paper. Using your hands, roll the dough into 1 Tbsp sized balls (about 20 grams each) and roll in the apple spice-sugar mix and place on the prepared baking sheets. Make sure to leave about 2 inches between each as they spread in the oven.
  5. Bake 10 minutes. Allow to set on the baking sheet about 2 minutes and then transfer to a wire rack.
