  1. Preheat the oven to 400°F. Line a baking sheet with foil and place a wire rack on top of it. In a shallow bowl, mix together the brown sugar, ground black pepper, and maple syrup. Dip the bacon strips into the mixture, making sure both sides are covered with the sugar/syrup mix. Line the bacon on the wire rack. Bake 15-20 minutes until the brown sugar is melted and caramelized and the bacon is cooked. Remove the tray from the oven and allow the bacon to cool and firm up. Once cooled, cut into small pieces.
Maple Bacon Cookies
  1. In the bowl of a stand mixer, or with a hand mixer, cream together the butter and sugar until light and fluffy–about 3-5 minutes. While that’s mixing, grab a second bowl and whisk together the flour, baking soda, and salt.
  2. Once the butter and sugar are light and fluffy, add the egg, vanilla, and maple syrup, one at a time. Mix to combine between each addition.
  3. Add the dry ingredients 1/2 at a time until the dough just starts to come together. Fold in the English toffee bits and candied bacon. Leave the dough to chill for 30 minutes.
  4. Preheat the oven to 325°F and line a couple of baking sheets with parchment paper. Using a large ice cream scoop, drop the cookie dough onto the prepared sheets. Bake 16-18 minutes until the edges are a light golden brown. The cookies will still be soft–leave them to cool on the sheet for 3-5 minutes before transferring them over to a cooling rack.
